"Butterscotch" Cake Batter Cookies
I copied this recipe from Pinterest, again, what a surprise... But did not follow the recipe exactly.
I try to use what I already have in the house, as much as I can. I did not have vanilla pudding mix but I had butterscotch. I also had some leftover butterscotch chips from some cookies I made around Christmas, and star shaped sprinkles not round ones.
They turned out great! They're very soft and plump, tasty and cute. But I did find them a bit too sweet with the butterscotch. I'd really like to try the vanilla as in the original recipe. Also, they turned out a maple brown color, not white, because of the butterscotch pudding as well... so not as pretty as the pinterest recipe... but still a success overall!

1 and 1/2 sticks (or 3/4 cup) butter
3/4 cup brown sugar
1/4 cup sugar
1 (3.4 oz/99g) package instant vanilla pudding mix
3/4 cup boxed yellow cake mix
2 eggs
1 tsp vanilla (I always add double the vanilla - thanks to Chef Michael Smith - its always better!)
1 tsp baking soda
2-1/4 cups flour
1/2 tsp salt
about 1/3 jar of sprinkles
Preheat oven to 350 F.
Stir together flour, salt and baking soda and set aside.
In a large bowl, cream butter and sugars together.
Add in pudding package and cake mix and beat until well blended.
Add eggs and vanilla and mix until smooth.
Add flour mixture slowly until well incorporated.
Mix in sprinkles.
Roll into 1" balls and place on greased baking sheet. (I used ungreased and it was fine)
Bake at 350 F for 10-12 minutes.
Afterthought: Apparently I am crazy. I thought I used butterscotch chips, but I noticed right away after I took the first batch out that something smelled like peanut butter. Guess what... after cooking 3 more batches I decided to look in the garbage and guess what... they were peanut butter chips, not butterscotch. LOL! So basically, I completely botched this recipe. They still taste good, but I will have to do a re-do and post it again when I 'find some time'!
